To celebrate Te Wiki o te Reo Māori, cookbook authors, 2014 MasterChef-winning sisters and badass wāhine Māori Karena and Kasey Bird (Te Arawa, Ngāpuhi, Ngāti Manawa) have translated some of the delicious recipes from their second cookbook, Hungry, into te reo Māori for The Spinoff. Today, poached pears in chocolate.

NGĀ PEA

  • kia 6 ngā kapu wai
  • kia 1 te pākano wānira, kua kōaratia
  • kia 2 ngā rākau hinamona
  • kia 3 ngā whetū ānihi (star anise)
  • kia ½ kapu huka parāone
  • kia ¼ kapu huka māiti (caster)
  • kia 4 ngā pea parāone, kua waruhia, kua tangohia ngā kākano

TE PURINI TIAKARETE

  • kia 200g tiakarete parauri
  • kia 120g te pata
  • kia ½ kapu huka māiti
  • kia kotahi kapu puehu parāoa
  • kia 3 ngā hēki
  • ka mutu he puehu huka, he aihikirīmi wānira

Te tunu i ngā pea kōhua:

Ki roto i tētahi kōhua nui, whakakiia ki te wai. Rau atu te pākano wānira, te rākau hinamona, te whetū ānihi me ngā huka e rua. Kōrorihia, ka whakawerahia.

Hoatu ngā pea kua whakarerihia, ka tunua mō te whā tekau mā rima meneti, kia ngohengohe. Waiho te taupoki ki runga.

Te tunu i te purini:

Whakawerahia te tō ki te 200°c. Purua te tiakarete me te pata ki tētahi ipu pōkāka. Ka whakatakotoria ki runga i tētahi kōhua wai koropupū.

Kōrorihia kia rewa. Ki roto i tētahi atu ipu, whāranuhia te huka māiti, te puehu parāoa me ngā hēki. Kaurorihia te tiakarete rewa.

Whakatūria ngā pea takitahi ki rō ipu nohinohi pōkākā, tekau henemita te rahi.

Ringihia te keke ki ngā tahataha o ngā pea kia kī te ipu āhua 2/3 te kī. Ka noho ake te tipu o te pea. Tunua mō te rua tekau meneti. Ruiruihia te puehu huka ki runga, ka tāpiri atu te aihikirīmi.
