Need a snack that requires little thought yet is guaranteed to satisfy? We got you.

For those of you who are intimate with the wonderful combination that is peanut butter and banana on toast, scoff not at this recipe. The addition of dates, cinnamon and just the slightest pinch of sea salt take this breakfast, or lunch, or dinner (!) offering to a whole new level. In the hazy days after Christmas and New Year when we’ve all eaten and drunk more than is good for us, look to this recipe. It requires little thought and effort and yet is guaranteed to satisfy. Happy New Year to you all, may 2022 be overflowing with family, good friends, even better food and lots of time in the great outdoors.

PEANUT BUTTER, BANANA & DATES ON TOAST

Makes 2 pieces of toast

  • 2 slices Vogel’s bread or sourdough
  • butter
  • peanut butter (crunchy or smooth)
  • 1 large banana
  • 2 dates, finely chopped
  • cinnamon
  • sea salt

Toast the Vogel’s to your liking (I prefer mine well toasted and almost crunchy!).

Spread with butter and peanut butter.

Slice the banana on the diagonal and arrange on the two pieces of toast.

Sprinkle each piece with a generous pinch of cinnamon and a smattering of sea salt. Serve with black coffee, if required.
