To celebrate Te Wiki o te Reo Māori, cookbook authors, 2014 MasterChef-winning sisters and badass wāhine Māori Karena and Kasey Bird (Te Arawa, Ngāpuhi, Ngāti Manawa) have translated some of the delicious recipes from their second cookbook, Hungry, into te reo Māori for The Spinoff. Today, fried chicken.

HEIHEI PARAI

  • kia 4 ngā heihei korehere kore hiako (arā ngā kūhā)
  • kia 1 te kapu sriracha (me ētahi atu hei kīnaki)
  • kia 1 te kapu puehu parāoa 
  • he tote / he pepa
  • kia 2 ngā heki kore here
  • he hinu hei parai hōhonu
  • he kimchi (kei ngā toa Āhia)

Tapahia te heihei kia āhua motumotu. Pūrua ki roto i te ipu. Tāpirihia te sriracha ka whakawhenumia te heihei. Waiho ki rō pouaka makariri mō te whā hāora/mō te pō rānei.

Kia reri mai koe ki te tunu, tangohia te heihei i te pouaka makariri, ka waiho mō te tekau mā rima meneti pea i mua i te tunu.

Pūrua te puehu parāoa ki roto i tētahi ipu nui, ka hoatu te tote me te pepa, ka mīkihia. Tangohia te heihei kei rō sriracha, ka hurihurihia ki rō puehu parāoa, kātahi  ka pūrua ki roto i te hēki kua kaurorihia. Whakahokia ki te puehu parāoa ka hurihurihia anō.

Whakarewahia te hinu kia tae ki te 160°C. Paraihia te heihei. Kia torutoru nei ia wā, kia parāone, kia māoa a waho a roto hoki. E whitu, e waru meneti pea. Whakamarokehia ki te tāora pepa. Kainga me te kimchi, te ranu me te sriracha ki te taha.
